Today I did some more canning, trying a different recipe. These are Honeyed Oranges, a recipe I got from here. I used four large navel oranges, very ripe. Slices of the oranges are simmered until the peel is soft. Then you drain the oranges and mix them in a syrup made with sugar, honey, lemon juice, and cinnamon sticks and whole cloves for spice. This sweet mix simmers for 40 minutes while you get the jars sterilized. Put the hot oranges in the hot jars, then ladle the hot syrup over the oranges, making sure you strain out the spices. You don't want to jar them. Process the jars in a boiling water canner for about 15-20 minutes. All done! Sunshine in a jar!
